In a mixing bowl, combine the shredded chicken with 1/4 cup of BBQ sauce. Season with salt and pepper, and mix well.
Place the flatbreads on a baking sheet and brush the olive oil generously over each flatbread.
Spread the remaining BBQ sauce evenly over the flatbreads, leaving a small border around the edges.
Evenly distribute the BBQ chicken mixture across the sauce on each flatbread.
Sprinkle shredded mozzarella cheese over the chicken.
Top with thinly sliced red onions and corn kernels.
Bake in the preheated oven for about 12-15 minutes until the cheese is melted and bubbly.
Carefully remove from the oven and allow to cool for a few minutes.
Garnish with fresh chopped cilantro and slice into wedges for serving.
Notes
For a rustic touch, serve the flatbread pizza on a wooden board. Garnish with additional cilantro and place a small bowl of BBQ sauce on the side for dipping.
