Instructions
Begin by preheating your oven to 350°F (175°C). Prepare two baking sheets by lining them with parchment paper to prevent sticking.
In a medium mixing bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground ginger, ground cardamom, ground allspice, ground nutmeg, and salt. This will create a well-combined dry mixture – set aside for later use.
In a large mixing bowl, use an electric mixer to cream the softened unsalted butter with the packed brown sugar and granulated sugar. Beat this mixture for about 2-3 minutes until it becomes light, fluffy, and pale in color.
Next, add in the large egg and pure vanilla extract to the butter-sugar mixture. Beat until both ingredients are fully incorporated and the mixture is smooth.
Gradually incorporate the previously prepared dry ingredients into the wet mixture. Mix gently until just combined; be careful not to overmix, as this can affect the texture of the cookies.
If you choose to include them, fold in the chopped walnuts or pecans and the raisins or dried cranberries into the dough until evenly distributed throughout.
Using a tablespoon or a cookie scoop, portion out the dough and drop rounded balls onto the prepared baking sheets. Ensure that each cookie is spaced about 2 inches apart to allow room for spreading while baking.
Place the baking sheets in the preheated oven and bake for 10-12 minutes. The cookies should be lightly golden at the edges but remain soft in the center. Keep a close watch to avoid overbaking!
Once done, remove the baking sheets from the oven and let the cookies cool on the sheets for about 5 minutes. After that, carefully transfer the cookies to a wire rack to cool completely.
Notes
For a festive touch, sprinkle a light dusting of cinnamon on top and add a few star anise for visual appeal.
