Begin by rinsing the fresh cranberries thoroughly under cold water, ensuring to pick out and discard any stems or damaged berries.
In a medium-sized saucepan, combine the rinsed cranberries, granulated sugar, and freshly squeezed orange juice.
Heat the mixture over medium heat, stirring occasionally. You will notice the cranberries begin to pop as they cook; this is the desired result.
Continue to cook until most of the cranberries have popped and the sauce has thickened, which should take about 10 minutes. At this point, add the vanilla extract, ground cinnamon, and the zest of one orange. Stir everything together until fully combined.
If desired, gently fold in the chopped walnuts or pecans at this step to enhance the texture of the sauce.
Remove the saucepan from the heat and allow the sauce to cool slightly. Keep in mind that it will continue to thicken as it cools.
Once cooled, transfer the cranberry bliss sauce into a clean jar or bowl, then refrigerate it until you are ready to serve.
