boneless, skinless chicken breast, cut into bite-sized pieces

Instructions
Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
In a mixing bowl, combine the breadcrumbs, Parmesan cheese, dried Italian herbs, garlic powder, smoked paprika, salt, and pepper. Mix thoroughly.
In a separate bowl, beat the eggs until frothy, then stir in the olive oil.
Dip each piece of chicken into the egg mixture, then roll in the breadcrumb mixture, pressing gently.
Arrange the breaded chicken bites on the prepared baking sheet, spaced evenly.
Bake for 15-20 minutes, or until golden brown and the internal temperature reaches 165°F (74°C).
Remove from the oven and allow to cool for a few minutes. Sprinkle with fresh parsley before serving.
Notes
Serve in a rustic basket with dipping sauces for a delightful presentation.
