Instructions
Preheat the oven to 425°F (220°C).
Rinse the russet potatoes under cold running water and scrub the skins. Pat them dry with a kitchen towel.
Lay each potato on a cutting board and make several evenly spaced cuts into the potato, about 1/4 inch apart, without cutting all the way through.
In a small mixing bowl, whisk together the melted butter, minced garlic, chopped rosemary, salt, and black pepper.
Coat the potatoes with the garlic butter mixture, ensuring to apply some between the cuts.
Arrange the potatoes on a baking sheet lined with parchment paper and pour any remaining garlic butter over them.
Bake the potatoes for about 45 to 55 minutes until tender and crispy, basting with more garlic butter halfway through.
If using Parmesan cheese, sprinkle it over the potatoes during the last 5 to 10 minutes of baking.
Remove the potatoes from the oven and garnish with fresh chopped parsley before serving.
Notes
For a cheesy finish, add Parmesan cheese during the last minutes of baking.
