Prep the Potatoes: Preheat your oven to 400°F (200°C). In a large mixing bowl, combine the halved baby potatoes, olive oil, smoked paprika, salt, and black pepper. Toss until the potatoes are evenly coated. Arrange them in a single layer on a baking sheet, ensuring they are not crowded.
Roast the Potatoes: Insert the baking sheet into the preheated oven and roast the potatoes for about 25-30 minutes. Stir them every 10 minutes to ensure they roast evenly until they achieve a golden brown and crispy exterior.
Cook the Steak Bites: While the potatoes are roasting, heat a large skillet over medium-high heat. Add 2 tablespoons of butter and allow it to melt completely. Season the steak pieces generously with salt and black pepper. Once the butter is sizzling, carefully add the steak bites to the skillet in a single layer (work in batches if necessary to prevent overcrowding).
Sear the Steak: Sear each side of the steak bites for approximately 2-3 minutes until they develop a beautiful crust. Use a meat thermometer to check for doneness, aiming for medium rare at about 130°F (54°C).
