Instructions
In a small bowl, sprinkle the gelatin powder evenly over the cold water. Allow it to sit for about 5 minutes until it becomes jelly-like and puffy.
In a medium mixing bowl, whisk together the cooled brewed coffee, ground ginger, ground cinnamon, ground nutmeg, molasses, and vanilla extract until all the spices and molasses are fully integrated.
Warm the bloomed gelatin gently over low heat or in the microwave for about 10-15 seconds. Stir until it is completely dissolved, then carefully mix it into the coffee mixture. Ensure everything is combined well.
In a separate bowl, combine the heavy cream and confectioners' sugar. Using an electric mixer, whip the cream until soft peaks form, making sure not to whip it too much—the cream should remain light and airy.
Gently fold the whipped cream into the coffee mixture in three separate additions. Use a spatula to fold rather than stir, maintaining the fluffiness of the whipped cream.
Lightly grease your silicone dome molds with a bit of cooking spray or use silicone baking mats to prevent sticking.
Evenly sprinkle the crushed gingerbread cookies at the bottom of each dome mold, creating a base layer. Carefully pour the mousse mixture over the crumbs, filling each dome until just level with the top.
Place the filled molds in the refrigerator and chill for at least 4 hours, allowing the mousse to set completely.
Once set, gently pull the edges of the silicone molds to release the domes. For an added touch, you can lightly torch the tops of the domes to create a glossy finish.
Finish each dome with a generous dollop of whipped cream on top. Sprinkle with additional crushed gingerbread cookies and add chocolate shavings for an elegant touch.
