Instructions
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
In a large mixing bowl, add the diced sweet potatoes and sliced sausage. Mix well to combine.
In a separate small bowl, whisk together the honey, minced garlic, olive oil, smoked paprika, cayenne pepper (if using), sea salt, and black pepper until smooth.
Pour the honey garlic mixture over the sweet potato and sausage medley. Toss everything together to coat evenly.
Transfer the mixture to the prepared baking sheet, spreading it out in a single layer.
Place the baking sheet in the preheated oven and roast for 25-30 minutes, stirring halfway through.
Once fully roasted, carefully remove the baking sheet from the oven and allow to cool for a couple of minutes.
Just before serving, sprinkle freshly chopped parsley over the dish.
Notes
Serve in a rustic dish or individual bowls. Drizzle with additional honey for extra sweetness.
