Instructions
Start by preheating your oven to 400°F (200°C). For easy cleanup later, line a baking sheet with parchment paper.
In a large mixing bowl, add the cubed sweet potatoes along with the chopped pecans. Pour in the pure maple syrup and olive oil, then sprinkle in the ground cinnamon, nutmeg, sea salt, and black pepper.
Using a spatula or wooden spoon, gently toss and mix the ingredients until the sweet potato cubes are thoroughly coated with the maple syrup and spices.
Transfer the sweet potato and pecan mixture to the prepared baking sheet, spreading it out evenly. Avoid overcrowding the pan; this will help the sweet potatoes roast evenly and become crisp.
Place the baking sheet in the preheated oven and roast the mixture for 25-30 minutes. Halfway through, stir the sweet potatoes to promote even browning and caramelization. Keep roasting until the sweet potatoes are fork-tender and have developed a lovely golden-brown color.
Once roasted, carefully remove the baking sheet from the oven and allow the sweet potatoes to cool for a few minutes. If desired, brighten the dish with a garnish of freshly chopped parsley or thyme to add a splash of color and a hint of fresh flavor before serving.
