Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and allow for easy cleanup.
In a large mixing bowl, use a hand mixer or stand mixer to cream together the softened butter, brown sugar, and granulated sugar. Beat the mixture until it becomes light and fluffy, which should take about 2-3 minutes.
Add the egg and vanilla extract to the creamed mixture, and continue mixing until the ingredients are thoroughly combined and smooth.
In a separate bowl, sift together the all-purpose flour, baking soda, and salt. Gradually incorporate the dry ingredients into the wet ingredients, mixing just until no flour streaks remain—be careful not to overmix.
Gently fold in the semi-sweet chocolate chips, chopped maraschino cherries, and walnuts (if using) until everything is evenly distributed throughout the dough.
Using a tablespoon or cookie scoop, drop rounded mounds of dough onto the prepared baking sheet, ensuring they are spaced about 2 inches apart to allow for spreading.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown and the centers appear set but still slightly soft.
Once baked, remove the cookies from the oven and let them cool on the baking sheet for approximately 5 minutes. This will help them firm up before transferring them to a wire rack to cool completely.
