Instructions
In a medium-sized mixing bowl, combine the crushed Oreo cookies and melted butter. Stir well until the Oreo crumbs are fully coated with butter, creating a moist mixture.
Transfer the Oreo mixture into a lined 9x9 inch baking dish. Press it firmly into the bottom to form an even crust, ensuring it's packed tightly. Set it aside while you prepare the filling.
In a large mixing bowl, using an electric mixer on medium speed, beat the softened cream cheese until it is smooth and creamy without lumps.
Gradually add the powdered sugar and vanilla extract to the cream cheese, mixing until the ingredients are thoroughly combined and the mixture is velvety.
In a separate bowl, pour in the heavy cream and whip it using a hand mixer or a stand mixer on high speed until stiff peaks form. This should take a few minutes.
Carefully fold the whipped cream into the cream cheese mixture using a spatula, combining them gently to maintain the lightness of the whipped cream. Be careful not to deflate the mixture!
Once combined, fold in the coarsely chopped Oreo cookies, ensuring they're evenly distributed throughout the mixture for bites of cookie goodness.
Pour the cheesecake filling over the prepared crust in the baking dish. Use a spatula to spread it evenly to the edges.
Crumble additional Oreo cookies on top of the cheesecake layer for decoration and a delightful crunch.
Cover the dish with plastic wrap and refrigerate for at least 4 hours, or until the cheesecake is set and firm to the touch.
Once chilled and set, use a sharp knife to cut the cheesecake into even bars. Serve immediately or keep refrigerated until ready to enjoy.
