In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Using an electric mixer, beat on medium speed until the mixture is smooth, creamy, and free of lumps, about 2-3 minutes.
In a separate bowl, pour in the heavy cream. Whip the cream using either a hand mixer or a stand mixer on high speed until stiff peaks form, which should take approximately 3-5 minutes. The whipped cream should be thick enough to hold its shape.
Carefully fold the whipped cream into the cream cheese mixture using a spatula. Gently lift and fold the ingredients together, ensuring you don’t deflate the whipped cream, until the mixture is fully combined and smooth.
In a small bowl, combine the graham cracker crumbs with the melted butter. Stir until the crumbs are evenly coated and resemble wet sand.
Begin layering the cups or glasses: add a spoonful of the graham cracker mixture to the bottom of each serving cup, pressing down gently to form a compact base.
On top of the graham cracker crust, add a generous layer of the cream cheese mixture, spreading it evenly with the back of the spoon.
Next, sprinkle a layer of the diced fresh strawberries over the cream cheese layer, followed by another layer of the cream cheese mixture. Continue to alternate layers—graham cracker crumbs, cream cheese, strawberries—until all ingredients are used, ensuring the final layer is the cream cheese mixture.
For the finishing touch, decorate the top of each cup with a few fresh strawberry slices and place a mint leaf on top for an elegant garnish, if desired.
Notes
For an extra touch, consider serving the cups on a decorative platter, garnished with additional mint leaves and whole strawberries around them for a colorful display.
