10mediumapples (a combination of sweet Honeycrisp and tart Granny Smith, cored and quartered)
1mediumorange, quartered
3wholecinnamon sticks
1tablespoonwhole cloves
1tablespoonallspice berries
0.5cuppacked brown sugar (adjust to taste for desired sweetness)
10cupswater
1teaspoonpure vanilla extract
Instructions
Start by placing the quartered apples and orange into the bowl of your Instant Pot, layering them evenly.
Sprinkle the cinnamon sticks, whole cloves, allspice berries, and brown sugar over the top of the fruit.
Carefully pour the water into the pot, ensuring it completely covers the fruit and spices to enhance flavor extraction.
Securely close the lid of the Instant Pot and set it to Manual mode, selecting high pressure, and cook for 15 minutes.
After the cooking cycle is complete, let the pressure release naturally for about 10 minutes, then carefully switch to quick release to let any remaining steam escape.
Once the lid is removed, employ a potato masher or an immersion blender to thoroughly mash the fruit and spices into a pulpy mixture.
Using a fine-mesh sieve or cheesecloth, strain the mixture into a large bowl, discarding the solids to ensure a smooth cider.
Stir in the vanilla extract, tasting and adjusting the sweetness with additional brown sugar if preferred.
If you desire a hotter beverage, return the cider to the Instant Pot and use the Sauté function to heat it for a few minutes until warm.
Notes
Serve in heatproof mugs with a cinnamon stick and apple slices for garnish.
